This recipe, for triple melon salsa flavored with mint and lime, requires no cooking, and can be created in a short amount of time. Homemade salsa is a refreshing change from pre-made jars of salsa purchased at the grocery store. Triple melon salsa, with mint and lime, will last for up to one week in the refrigerator.
Triple melon salsa is a sweet and subtly spicy dish that compliments a wide variety of meat dishes. Serve the melon salsa as a condiment to compliment seafood, turkey burgers, grilled pork, grilled chicken and more. Vegetarians can serve the salsa along with grilled tofu, tofu burgers or as the topping for meatless tacos. Triple melon salsa can also be eaten on its own as a refreshing side salad. Serve the salsa along with corn chips and a cool iced tea for a complete meal.
Ingredients for the Triple Melon Salsa
- 1 cup cantaloupe – seeded, peeled, diced
- 1 cup honeydew – seeded, peeled, diced
- 1 cup watermelon – seeded, peeled, diced
- ½ cup green bell pepper – seeded and diced
- ½ cup red bell pepper – seeded and diced
- 2 jalapeño peppers – seeded and diced
- ½ cup red onion – peeled and diced
- Zest from 1 lime
- ¼ cup freshly squeezed lime juice
- ¼ cup fresh mint leaves – chopped fine
- ½ teaspoon salt
- ¼ teaspoon white pepper
Directions for the Melon Salsa
- Combine the cantaloupe, honeydew and watermelon in a large bowl.
- Stir in the green and red bell peppers, jalapeño pepper and red onion.
- In a small bowl, make the dressing my whisking together the lime zest, lime juice, mint, salt and pepper.
- Pour the dressing over the salsa and toss together.
- Place the melon salsa in the refrigerator and chill for at least 2 hours, or overnight, before serving.
Melon Availability
Melons are typically in abundance during the late summer months of July and August. Check local grocery stores and farmer's markets for availability. However, melon can be found year round in many areas, especially in the southern states of North Carolina, South Carolina, Georgia and Florida. Try substituting mango or peaches for the cantaloupe, and pears for the honeydew, for an interesting change to this salsa recipe.
